Heat olive oil in a large skillet or wok over high heat.
Add thinly sliced beef to the skillet and stir-fry until browned and cooked through, about 3-4 minutes.
Add minced garlic and grated ginger to the skillet and cook for another minute until fragrant.
Add assorted vegetables to the skillet and continue stir-frying until they are tender-crisp.
Pour soy sauce and honey over the beef and vegetables. Stir to combine and cook for another minute.
Serve the beef stir-fry over cooked rice or noodles.
