Slice the beef into thin strips, then place into a bowl. Mix with 1 tbsp cornflour, 1 tbsp soy sauce and ½ tsp baking soda.
Blanch broccoli in boiling water for 2-3 minutes until just tender. Drain and set aside.
In a bowl, whisk together soy sauce, oyster sauce, rice vinegar, sesame oil and honey.
Heat 1 tsp oil in a frying pan over high heat. Add the beef and stir-fry for 2–3 minutes until browned but still tender.
Add the garlic and ginger. Cook for 1-2 minutes until fragrant.
Cook the noodles according to packet instructions. Drain, then rinse under cold water.
Add the broccoli, cooked noodles, and the sauce. Toss everything together for 2 minutes until hot and well coated.
Serve garnished with sesame seeds and spring onions. Then enjoy, lovely!
