Unroll the puff pastry dough sheet and slice into 6 squares.
On a large parchment lined baking sheet, place 6 pinches of cheese and then top each with 1 sausage.
Cover each with 1 square of puff pastry, press to seal, and brush tops with egg wash.
Sprinkle with seasoning and then bake at 425° for 12-15 minutes.
Allow to cool slightly and drizzle with ketchup and mustard if preferred.
