Work the butter into the flour until the mixture is crumbly.
Mix in cheese, chives/scallion tops, and bacon.
Add sourdough starter and stir to combine.
Gradually add cream until the dough becomes cohesive.
Divide the dough into disks and cut into wedges.
Brush with cream, bake for 22-24 minutes until golden brown.
Cool and serve.
