Preheat oven to 450°F and line a sheet pan with parchment paper.
Chop potato and toss with olive oil, salt, and garlic powder. Spread evenly on baking sheet and roast for 30 minutes, flipping halfway, until golden and crispy.
While potatoes cook, make ground beef in a skillet over medium heat. Drain if needed then stir in taco seasoning with a splash of water. Simmer until thickened.
For homemade pico: in a small bowl, mix together tomatoes, onion, jalapeno, cilantro, lime juice, and salt.
Assemble bowls by layering roasted potatoes, seasoned beef, queso, spoonfuls of pico, and top with taco sauce. Add any extra toppings you like & enjoy!
