Cream 100g butter with 20ml lemon Olive Oil and 120g cater sugar.
Mix in 2 large eggs, the finely grated zest and the juice of a medium orange.
Finely fold in 120 g of self raising flour until just combined.
Butter and flour little moulds.
Sprinkle a few pieces of pistachios at the base of mould.
Transfer cake preparation in moulds and bake in prepared oven for about 15 minutes.
