Date And Cashew Energy Balls/Bars
  1. In a food processor, blend the cashews until reduced to a fine powder.

  2. Add the dates and blend until the mixture starts to come together.

  3. Add the cereal, pumpkin seeds, chocolate chips and pulse a few seconds until slightly crushed.

  4. With your hands, form into balls using 1 tbsp of the mixture for each one.

  5. Place the hemp seeds ( or sesame seeds ) in a shallow dish.

  6. Roll each ball in the hemp seeds, pressing to coat well.

  7. The energy balls will keep for 1 week in an airtight container at room temperature. Or “forever” in a freezer!
