High Protein Lentil Curry
  1. Add cooking oil and butter to heated pan. Then add in chopped onions. Sauté until translucent and then add in minced garlic.

  2. Add all the spices including salt and sauté until onions are coated. Add in ground chicken and cook thoroughly for 3-5 min.

  3. Add chopped green onions.

  4. Rinse lentils and add to chicken. Pour in the water or broth. Bring to a simmer and add in chopped cilantro.

  5. Let this simmer for 15 minutes until lentils are cooked. Then add in coconut milk.

  6. Continue letting this simmer until lentils thicken and the liquid is reduced (30 min).

  7. Squeeze in lemon and enjoy with rice!
