Mediterranean Egg Muffins With Sun-dried Tomatoes & Kalamata Olives
  1. Preheat your oven to 375°F (190°C)

  2. Thoroughly grease a 12-cup muffin tin with olive oil cooking spray

  3. Drain and chop sun-dried tomatoes if needed

  4. Roughly chop spinach leaves

  5. Crack eggs into a large mixing bowl

  6. Whisk until well combined and slightly frothy

  7. Season with salt and pepper

  8. Fold in chopped sun-dried tomatoes

  9. Add sliced kalamata olives

  10. Mix in chopped spinach

  11. Sprinkle in dried oregano

  12. Gently stir to distribute ingredients evenly

  13. Pour egg mixture evenly into prepared muffin cups, filling each about ¾ full

  14. Sprinkle crumbled goat cheese on top of each muffin

  15. Lightly press cheese into egg mixture

  16. Bake in preheated oven for 16-18 minutes

  17. Muffins should be set and slightly golden on top

  18. Let cool in tin for 5 minutes before removing

  19. Optional: drizzle with extra virgin olive oil before serving
