Butter Lace Cookies
  1. Turn your oven to 350°. Line a baking sheet with parchment paper or a silicone baking mat and set aside.

  2. Melt the butter in a medium sized sauce pan over medium heat.

  3. Once the butter is melted, add in the sweetener, almond flour, heavy cream and salt. Whisk until everything is combined and the sweetener is dissolved. (3-5 minutes)

  4. Remove from heat and whisk in the vanilla. Let the dough sit for about 5-10 minutes so that it'll thicken.

  5. Drop a teaspoon full of of the dough onto the baking sheet and space them about 3 inches apart to allow spreading.

  6. Bake for 8-10 minutes or until the edges are golden brown. Allow the cookies to cool completely.

  7. Place the chocolate chips in a microwave safe bowl and heat for 30 seconds. Take it out and stir and then place in the microwave again in 15 second increments, until fully melted.

  8. Dip the bottom of the cookie in the melted chocolate and then place another cookie on top. Allow them to cool so the chocolate will set.
