Red Lentil Dal
  1. Sauté onion in butter and olive oil until soft and translucent

  2. Add ginger, garlic, chopped chili and turmeric for a minute or two

  3. Add spices and stir consistently until they are releasing aroma, optionally adding a little more butter

  4. Add coconut milk and 1.5 cans worth of water

  5. Once simmering, add 1.5 cups of rinsed red lentils

  6. In the instant pot, cook for 10 minutes pressurized, or on the stovetop simmer for 20 minutes or until it reaches desired consistency
