Press the tofu for 15 minutes to remove some moisture. Cut it into chunks.
Whisk baking soda, starch, and 3 tbsp water and marinate the tofu in the mixture for 15 minutes, flipping halfway in between.
Air fry the tofu at 400 F for 10 minutes.
In a bowl, combine garlic, shallot, lemongrass, soy sauce, honey, fish sauce, and 1 tbsp water.
Heat oil in a pan over medium heat and saute the garlic lemongrass mixture for 1 minute.
Add the air fried tofu in and toss the tofu in the sauce for a few minutes until all the tofu is coated.
Garnish with green onions and chili flakes and enjoy!
