Preheat oven to 350F (176C) and line a 9X5 loaf pan with parchment paper.
Wash and cut your strawberries and in a small bowl, mix 1 Tbsp flour and coat the strawberries. Set aside.
In a medium bowl, whisk the sugar and vanilla together. Add the eggs, oil, milk and sour cream and whisk till combined. Set aside.
Mix your flour, baking powder and salt in a large bowl and pour your wet batter into the flour mixture. Fold till combined.
Add ⅓ of the batter as the bottom layer in your loaf pan and then add a layer of strawberries. Repeat the process ending with a final layer of batter.
Bake for 55-65 minutes or until you can insert a toothpick in the center and it comes out clean. Cool completely.
While your loaf is cooking, whisk together the glaze ingredients. Pour over the cooled loaf.
Serve by cutting a thick slice of the loaf, top with whipped cream and strawberry compote and enjoy.
