  3. Combine the cooked scallions with fresh herbs

  4. Mix in yogurt, the tangier the better

  5. Add lemon or lime juice if needed to adjust tartness

  6. If using pumpkin seeds, add them to thicken the sauce

  7. Refrigerate until ready to serve; sauce will thicken more in the fridge
