Make the Ube Base: Whisk the 3 duck egg yolks, sugar, cornstarch, and salt in a bowl. Heat the milk in a saucepan over medium heat until warm. Slowly pour the warm milk into the duck egg mixture in a very thin, steady stream while whisking constantly.
Thicken on Low Heat: Pour the mixture back into the saucepan. Cook over low to medium-low heat, stirring continuously. Cook until the pastry cream thickens significantly and begins to bubble.
Add Ube and Butter: Remove from heat. Immediately stir in the ube halaya, ube extract, vanilla extract, and butter until completely smooth. Press plastic wrap directly onto the surface of the cream and chill in the refrigerator for at least 3 hours.
Make the Whipped Cream: In a large bowl, whip the heavy cream and powdered sugar until stiff peaks form.
Lighten the Pudding: Whisk your chilled ube pastry cream to smooth it out. Gently fold 1 cup of the whipped cream into the ube pastry cream. This turns the dense custard into a fluffy, scoopable pudding. Reserve the remaining whipped cream for the top.
Assemble the Layers: In a 9x13-inch baking dish or a large glass trifle bowl, assemble the layers:
Top and Chill: Spread the remaining plain whipped cream over the very top. Garnish with a few crushed vanilla wafers. Refrigerate for at least 4 to 6 hours (overnight is best) so the cookies soften into a cake-like texture before serving.
