Make a marinade by combining the olive oil, lemon juice, oregano, thyme, salt and pepper.
Add the chicken breasts to a baking dish and pour the marinade over them. Cover and refrigerate for 3 hours to marinate.
Preheat the oven to 200°C. Roast the chicken for about 30 minutes, turning occasionally, until cooked through.
Serve the herb and lemon chicken with a side salad or mixed vegetables.
