Combine 1.5 cups rice with 1 ¼ cup boiling water and 1 cup coconut milk
Cook rice until tender
Mix 2 tbsp light brown sugar, 3-4 tbsp light soy sauce, and 1 tbsp dark soy sauce together
Mince 2 garlic cloves and small piece of ginger
Add garlic and ginger to sauce mixture
Stir in ½ tbsp rice vinegar to sauce
Cook chicken in the sticky soy sauce until coated and cooked through
Serve sticky soy chicken over coconut rice
