First make the tahini sauce by mixing together tahini, garlic, lemon juice, water, and salt until creamy. Set aside.
Preheat oven to 220°C and prepare a greased baking sheet.
In a large bowl, toss sweet potatoes and cauliflower with olive oil, salt, and harissa seasoning. Spread on the prepared baking sheet.
Place the baking sheet in the oven and bake for about 20 minutes.
In a bowl, toss chickpeas and shallot with olive oil, salt, and harissa seasoning.
After 20 minutes, add the chickpeas and shallot to the baking sheet with the veggies. Bake for another 10-15 minutes until veggies are crispy.
Remove from oven and top with fresh mint, dill, and tahini sauce.
