Baked Chicken With Roasted Cherry Tomatoes & Herbs
  1. Preheat the oven to 400°F (200°C).

  2. Rub the chicken breasts with olive oil, garlic powder, onion powder, paprika, salt, and pepper.

  3. Place the seasoned chicken breasts on a baking sheet lined with parchment paper or aluminum foil.

  4. In a bowl, toss the halved cherry tomatoes with olive oil, dried thyme, salt, and pepper.

  5. Add the tomatoes to the same baking sheet as the chicken, arranging them around the chicken breasts.

  6. Place the baking sheet in the preheated oven and bake for about 25–30 minutes until the chicken is cooked through (internal temperature should reach 165°F / 74°C) and the tomatoes are roasted and tender.

  7. If you want more color on the chicken, you can broil for an extra 2-3 minutes at the end.

  8. Sprinkle the freshly baked chicken with chopped parsley and a little lemon juice for extra flavor.

  9. Serve with the roasted tomatoes and enjoy!
