Single Serve No Bake Lemon Cheesecake
  1. In a small bowl, mix together the crust by mixing the crumbs, melted butter, and sugar.

  2. Press the graham cracker crust mixture into a large ramekin.

  3. In a medium bowl, mix together the cream cheese, sugar, vanilla, and lemon juice/zest until smooth.

  4. In a separate bowl, whip the chilled heavy cream until stiff peaks form.

  5. Fold the whipped cream into the cream cheese mixture until combined.

  6. Pour the filling on top of the crust and spread into an even layer.

  7. Chill in the fridge for at least 30 minutes or even better, 5-6 hours, to firm up.

  8. Sprinkle with a little extra lemon zest and enjoy!
