Bolognese Meat Sauce (Biba Caggiano)
  1. In a large saute pan, heat olive oil, add onion, carrot and celery. Saute over medium heat until lightly browned.

  2. Add ground turkey. Cook and stir until meat is no longer pink. Season with salt and pepper.

  3. Increase heat, and stir in wine. Cook until wine has evaporated.

  4. Stir in crushed tomatoes. Cover and reduce heat. Simmer for for 1 to 1.5 hours. Stir occasionally.

  5. Add milk and cook 5 minutes longer. Makes 2.5 to 3 cups of sauce.
