In a bowl, mix yeast, sugar, and water. Add flour and mix until combined.
Add salt and olive oil, then coil fold immediately (no waiting). Keep folding until the dough can’t fold anymore, then cover and leave in a warm place for 2 hours.
Wet your hands and pull the dough 4 times, then divide into 4 portions and place on parchment paper.
Wet your hands again, gently press and shape the dough, then let them rest for 10 minutes. Brush with egg yolk mixed with a few drops of vinegar.
Preheat oven with a tray inside. Slide your bread onto the hot tray and bake at 500°F on the middle rack for 12 minutes.
