Grate the tomatoes on a box grater into a bowl. Use a sieve to strain out any excess water.
Add one tablespoon of Pizza Oil to the grated tomatoes and season generously with flaky salt.
Heat a pan over medium heat with two tablespoons of Pizza Oil. Fry the bread until golden brown and toasted on both sides.
Rub the toasts with garlic and cut into thirds.
Spoon the tomato mixture onto the toasts and top each with an anchovy fillet.
Finish with a glug of Pizza Oil and a sprinkle of flaky salt. Enjoy immediately!
