  1. In a medium pot, bring 3 cups of water to a boil

  2. Reduce the heat to medium-low

  3. Slowly whisk in the polenta

  4. Continue whisking for about 15 minutes

  5. Add salt and taste

  6. Add up to 1 cup of water if it becomes too thick

  7. A bit of milk can be added instead of water

  8. Turn off the heat and whisk in the olive oil
