Ingredients:
3 cups of almond flour
1 cup of sugar
Pinch of salt
Zest of one lemon
1 teaspoon vanilla
¼ teaspoon of almond extract
Optional ingredient: Almeretto Liquor
3 egg whites
Icing sugar to roll the cookies
Almonds, either whole or slivered to top cookies
Method:
Make almond flour, sugar, salt, lemon zest, vanilla, and almond extract. Blend well.
Add egg whites to mix, one at a time. Mix well
Wet the palm of your hands with cold water (Liquor) to prevent dough from sticking.
Using a teaspoon, place in your palm and roll to form a ball
Place the rolled cookie ball into the icing sugar and cover well
Add cookies to parchment paper cookie sheet
Dent each cookie top with your thumb and place your almond in the cavity.
Bake at 325° Fahrenheit for 12 - 15 minutes
Cookies should appear cracked on the top but soft inside
