Preheat oven to 350F and line bread pan with parchment paper.
In a large bowl, add mashed bananas, maple syrup, and coconut oil, whisk to combine.
Add in eggs, cottage cheese and vanilla extract and mix well to combine.
In a separate bowl, pour in flour, baking soda, and salt and mix well; add to the wet ingredients.
Add in white chocolate chips and chopped pistachios and fold into the batter.
Pour your batter into the prepared pan and top with extra white chocolate chips and chopped pistachios.
Bake for 60-70 minutes or until a toothpick comes out clean.
Allow to cool for 10 minutes.
Melt your white chocolate with coconut oil in the microwave and stir.
Drizzle over the banana bread and top with additional pistachios.
Cut into slices and plate.
