Add 125g sugar to a clean 500ml PET bottle
Add 500ml warm water (approximately 50-60°C) and screw cap on tightly
Shake vigorously to dissolve sugar and add oxygen
Remove cap and add 10-15ml lemon juice for flavoring
Top up with 500ml cold water, leaving room for fermentation
Add ¼ teaspoon of Aldi bread yeast
Swirl gently to mix yeast throughout
Take initial hydrometer reading (should be around 1.042)
Place cap loosely (half turn) to allow gas to escape
Place on heating mat at proper temperature for 7-10 days
After 10 days, take final hydrometer reading (should be around 1.000)
Cold crash for 2-3 days to clarify
Serve chilled, preferably over ice
