Prepare Crust and Topping
Combine oats, flour, brown sugar, ginger, and salt.
Add melted butter and stir until crumbly.
Set aside ½ cup of the mixture.
Prepare Filling
Combine 1 cup strawberries, cornstarch, lemon juice, and ½ tablespoon granulated sugar.
Assemble and Bake
Press remaining crumble mixture into the pan.
Scatter 1 cup strawberries over the crust.
Sprinkle with cornstarch, lemon juice, and ½ tablespoon granulated sugar.
Scatter remaining 1 cup strawberries and ½ tablespoon granulated sugar over the top.
Sprinkle reserved crumbs over the top.
Bake at 375 degrees F for 35-40 minutes.
Cool completely.
Prepare Glaze
Whisk together powdered sugar, vanilla, and milk until smooth.
Finish
Drizzle glaze over cooled bars.
Slice and serve.
