Prepare Crust and Topping

  1. Combine oats, flour, brown sugar, ginger, and salt.

  2. Add melted butter and stir until crumbly.

  3. Set aside ½ cup of the mixture.

Prepare Filling

  1. Combine 1 cup strawberries, cornstarch, lemon juice, and ½ tablespoon granulated sugar.

Assemble and Bake

  1. Press remaining crumble mixture into the pan.

  2. Scatter 1 cup strawberries over the crust.

  3. Sprinkle with cornstarch, lemon juice, and ½ tablespoon granulated sugar.

  4. Scatter remaining 1 cup strawberries and ½ tablespoon granulated sugar over the top.

  5. Sprinkle reserved crumbs over the top.

  6. Bake at 375 degrees F for 35-40 minutes.

  7. Cool completely.

Prepare Glaze

  1. Whisk together powdered sugar, vanilla, and milk until smooth.

Finish

  1. Drizzle glaze over cooled bars.

  2. Slice and serve.
