Flip the pork belly over and score the meat side
Brush the meat side with a mix of hoisin sauce and Shaoxing wine
Massage the meat with the spice mix
Optionally marinate uncovered in the fridge overnight
Place the meat in a foil basket
Cover the skin with a salt and egg white paste
Air fry at 200°F for 30 minutes
Remove the salt crust
Brush on neutral oil
Air fry at 400°F for another 30 minutes
