Banana Bread
  1. Preheat your oven to 350°F (175°C) and prepare a 9x5 inch loaf pan with nonstick spray or parchment paper.

  2. If using nuts, toast them on a baking sheet for 5-7 minutes until fragrant, then set aside to cool.

  3. In a large bowl or stand mixer, beat the softened butter until smooth. Add both sugars and cream together for about 2 minutes until fluffy.

  4. Mix in the eggs and vanilla extract until just combined.

  5. In a separate bowl, mash the ripe bananas until you have 1 cup. Stir this into the butter mixture.

  6. Add the flour directly to the mix but don’t stir yet. Blend the oats into a powder using a food processor and add it to the bowl.

  7. Sprinkle in the baking soda, baking powder, and salt. If using spices, add them now.

  8. Mix the dry ingredients into the wet until fully combined.

  9. Finally, fold in the sour cream and toasted nuts, if desired.

  10. Pour the batter into the prepared pan and smooth the top.

  11. Bake for 55-65 minutes, using a toothpick to check for doneness; it should come out clean or with just a few moist crumbs.

  12. Allow it to cool for at least 20 minutes on a wire rack before slicing.
