Loaded Potato & Buffalo Chicken Casserole
  1. Preheat oven to 500F

  2. In a large bowl, mix together olive oil, salt, pepper, paprika, garlic powder & hot sauce

  3. Add cubed potatoes and stir to coat

  4. Transfer potatoes to a greased 9 x 13 inch baking dish, leaving behind excess oil/hot sauce mix

  5. Bake potatoes for 45-50 minutes, stirring every 10-15 minutes, until cooked through and crispy

  6. Coat cubed chicken with remaining oil/hot sauce mix

  7. Once potatoes are done, lower oven temperature to 400F

  8. Top cooked potatoes with marinated chicken

  9. Mix cheese, bacon & green onion, and top the chicken with this mixture

  10. Bake casserole for 15 minutes or until chicken is cooked and topping is melted

  11. Serve with extra hot sauce and/or ranch dressing
