Cut thin parts of chicken thigh into strips and roll into thick chunks
Mix marinade ingredients: salt, sugar, black pepper, soy sauce, sake, water, oyster sauce, garlic, ginger, and Toban Djan
Marinate chicken in the mixture, keeping ingredients separate initially to allow seasoning to penetrate
Preheat air fryer to 200°C (392°F) for at least 3 minutes
Mix all purpose flour and corn starch separately
Coat marinated chicken with flour and corn starch mixture
Mix in neutral oil for even caramelization
Fold thin strips in half to make thicker pieces, combining small bits as needed
Arrange chicken pieces in air fryer basket with space between each for even air flow
Spray with oil to prevent drying out (optional)
Cook at 200°C for 8 minutes
Rest for 2 minutes before serving
Serve with Japanese Mayo if desired
