Spicy Red Dahl
Ingredients (to serve 4)
In a medium-sized pot, heat the oil over a medium heat. Once the oil is hot, add the onion for a few minutes, when softened add garlic and ginger. Cook for about 6 minutes.
Stirring constantly, add the water / stock, lentils, spices and salt. Bring to a low boil, then turn down the heat to low, cover and let the dahl simmer for about 20 minutes, or until lentils are very tender.
Meanwhile, cook the rice.
Stir in the tomato puree until well combined. Cook for several more minutes, or until it’s the desired consistency, adding more water to the dahl if needed. Serve with yoghurt.
