  1. Rinse the scallops, cod, and shrimp under cold running water. Pat them dry with paper towels.

  2. Finely chop the onion, celery, and carrot. Mince the garlic.

  3. In a large pot or Dutch oven, melt the unsalted butter over medium heat.

  10. Reduce the heat to low and stir in the heavy cream. Allow to simmer for 5–7 minutes.

  11. Adjust seasoning with salt, black pepper, and cayenne pepper to taste.

  12. Garnish with freshly chopped parsley or thyme before serving.
