Eggs, milk, melted butter, sugar (if using), and salt in a large bowl.
While whisking until you get a smooth, lump-free batter. Add sparkling water if using.
For 20–30 minutes at room temperature. This helps it hydrate fully and makes better crepes.
Over medium heat and lightly grease with butter or oil.
Again before cooking. If it feels too thick, add a splash of milk.
Into the center of the pan and quickly tilt/swirl to spread it into a thin circle.
Until the edges begin to lift and the underside is golden.
With a thin spatula and cook the second side for about 30 seconds.
And cover with foil to keep warm. Repeat with remaining batter, re-greasing the pan as needed.
With jam, sweet cheese, or Nutella, then roll or fold into triangles. Dust with icing sugar if desired and serve warm.
