Hidden Veggie Pasta
  1. Preheat oven to 450°F and line a baking sheet with parchment paper.

  2. Prep the veggies and add them to the baking sheet. Drizzle with olive oil, salt and pepper, and Italian seasoning. Bake for 30 minutes or until tender.

  3. While veggies cook, prep pasta according to package instructions. Drain pasta and add it back to the pasta pot.

  4. When veggies are done add them to a high speed blender along with cheese and almond milk. Blend until you reach a thick creamy consistency.

  5. Add sauce to the pot with pasta and heat over low for 2 minutes, stirring until everything is well combined. Enjoy!
