First marinate meat with all ingredients listed above and let it sit while you prepare the other ingredients.
Slice Chinese broccoli on a bias to about ¼ inch thickness. Optional: steam Chinese broccoli with a splash of water in the microwave for 1 minute. Leave it uncovered.
Peel rice noodles making sure to keep them in long strands. Season with ½ tbsp dark soy sauce and toss until noodles are evenly coated.
Heat pan to high heat and add 2-3 tbsp of cooking oil. Sauté garlic and beef until 90% cooked through.
Add noodles to the pan. Cook for 2-3 minutes to get a little bit of a char or golden color. Try not to break up the noodles too much when mixing by scooping and lifting noodles. Set aside in the pan.
On med-high heat, scramble eggs until 80% done and then toss with noodles and beef.
Add Chinese broccoli and sauce, mix until everything is evenly coated. About 2 more minutes. ENJOY!
