Dorito Casserole
  1. Heat oven to 350 degrees.

  2. Heat a large sauté pan over medium heat.

  3. Brown ground beef, crumbling it with a spatula as it cooks. Add black beans and ⅔ of the taco seasoning along with a few splashes of water until the seasoning coats the beef and beans well.

  4. Transfer to a plate and set aside.

  5. Heat olive oil in the same large pan (no need to wipe it out) over medium high heat.

  6. Add onion, red pepper, and green pepper, along with a couple pinches of salt and pepper. Cook, stirring frequently for 5-6 minutes.

  7. Add garlic and remaining taco seasoning and cook, stirring frequently for 1 minute.

  8. Add ground beef and beans back to the pan and stir in sour cream, salsa, and half the shredded cheese.

  9. Cooking, stirring frequently for a couple minutes, or until all the ingredients are warmed through.

  10. Season to taste with salt and pepper.

  11. Cover the meat and veggie mixture with an even layer of the remaining cheddar cheese.

  12. Bake uncovered for 5-10 minutes or until the cheese is melted and the casserole is heated through.

  13. Add a hearty layer of smashed Doritos.

  14. Then layer with lettuce, tomatoes, a drizzle of sour cream, sliced green onion, cilantro, and sliced jalapeno. Enjoy!
