Preheat the oven to 425F and line a baking tray with parchment paper
Drain and rinse the chickpeas, then place in a clean kitchen towel and pat dry to remove excess moisture
Rub the towel over the chickpeas to remove excess skins and discard if desired
Transfer dried chickpeas to a bowl and mash well with a fork
Add the nutritional yeast and 1 ½ tbsp avocado oil, then stir well to combine
Transfer the mixture to the baking tray, spread evenly, and bake for 20 minutes
Remove from oven and add garlic powder, onion powder, and a generous pinch of salt
Drizzle with 1-2 tsp avocado oil and stir until well coated
Spread the mixture out again and bake for 8-10 minutes until golden and crispy, stirring every 5 minutes
Allow the chickpeas to cool completely before storing and serving
