Chocolate Coffee Sourdough Bread
  1. Put cocoa and coffee in a large mixing bowl. Whisk until smooth and allow to sit for 2 minutes.

  2. Add water, sugar, vanilla, and active starter. Whisk until starter is evenly distributed and sugar is well combined.

  3. Add flour and salt. Mix until dough is combined. Allow to sit for 1 hour.

  4. Mix dough on level 3 for 6-8 minutes in a stand mixer.

  5. Let rest until doubled in size, approximately 10-12 hours.

  6. Sprinkle dough working surface with flour. Fold chocolate chips into dough. Shape dough until taught. Coat in rice flour and place in banneton, seam side up.

  7. Second rise for 1 hour or place in the fridge until ready to bake.

  8. Preheat oven and Dutch oven to 500°F for one hour.

  9. Lower loaf into Dutch oven on parchment paper. Place 2-3 ice cubes under parchment. Bake at 450°F for 25 minutes. Remove Dutch oven lid and bake for 20-25 more minutes.
