In a cast iron skillet heat up about 1 tbsp olive oil and all your diced onion, bell pepper and jalapeno. Allow this to cook for about 5 minutes.
In a blender add your cottage cheese and taco seasoning. Blend on medium for 2 minutes or until completely smooth.
Add your smooth cottage cheese to your cast iron skillet. Add in your rotel and green chilies and mix until combined. Top with cheese and cover with aluminum foil.
Bake on 400F for 20 minutes covered and 5 minutes uncovered.
