Fleming's Potatoes (copycat Au Gratin Favorite)
  1. Preheat oven to 350°F and grease a 9×13 baking dish.

  2. Peel and thinly slice potatoes; prepare leeks by trimming, cleaning, and slicing.

  3. Sauté jalapeños and leeks in butter with salt and pepper for 4–5 minutes.

  4. Add cream and half & half; bring to a simmer, then remove from heat.

  5. Stir in cheddar and Monterey Jack until melted into sauce.

  6. Layer sliced potatoes and sauce in prepared dish, finishing with sauce on top.

  7. Cover with foil and bake 1 hour. Remove foil and bake 15 more minutes until golden.
