In a large skillet or pot, brown the ground beef over medium-high heat. Drain off any excess grease. Add spices.
Add the potato and salsa
Bring the mixture to a simmer, then reduce heat to low, cover, and cook for at least 20 minutes, or longer for flavors to meld.
Fold in half the cheese
Top with the other half
Serve hot over cooked rice or pasta.
