Creamy Potato and Lentil Dal
  1. Heat the oil in a sturdy pot

  2. Add the cumin seeds, then onion, then garlic and ginger. Cook gently until everything is soft and smells great.

  3. Can add other spices as desired at this time - cayenne, turmeric, paprika, cumin, etc. and let bloom for 30s.

  4. Add the curry powder then mix in the tin of tomatoes to form your base (I forgot the tomatoes).

  5. Add the potatoes, then chicken stock, lentils, and tomato paste. Bring to a boil then reduce heat and allow to simmer for 30 minutes (make sure to give it the odd stir).

  6. When the potatoes soften mash the mixture till all the big chunks of potato fall apart.

  7. Finish by adding in the coconut milk, coriander and lime juice
