Meatloaf
  1. Grate onion over breadcrumbs and toss to soak

  2. Add eggs, garlic, Worcestershire sauce, ketchup, parsley, thyme, beef bouillon, and black pepper to the breadcrumb mixture

  3. Mix well with hands

  4. Form into a loaf shape, pinching together and smoothing over creases and cracks

  5. Place in oil sprayed loaf pan

  6. Mix glaze ingredients: ½ cup ketchup, 2 tbsp cider vinegar, and 1 tbsp brown sugar

  7. Brush meatloaf with half the glaze

  8. Bake 45 minutes at 180C/350F (160C fan-forced)

  9. Pour out and discard excess oil

  10. Brush with remaining glaze

  11. Bake further 30 minutes

  12. Stand 10 minutes before slicing

  13. Serve with creamy mash and steamed greens or in white bread sandwiches with ketchup
