Sticky, Sweet & Savory Bourbon Chicken
  1. In a bowl, whisk together the soy sauce, hoisin sauce, ketchup, apple juice, water, apple cider vinegar, brown sugar, grated ginger and minced garlic.

  2. Season the chicken thighs evenly with onion powder, garlic powder, paprika and black pepper.

  3. Heat the oil in a skillet over medium-high heat. Sear the chicken on both sides until golden brown. It doesn’t need to be fully cooked yet. Remove and set aside.

  4. Pour the prepared sauce into the same skillet, scraping up all those flavorful browned bits from the bottom.

  5. Let the sauce simmer until reduced by about half, then stir in the cornstarch slurry to thicken it.

  6. Return the chicken to the pan and simmer until fully cooked (74°C / 165°F internally) and coated in that glossy, sticky sauce.

  7. Serve over fluffy rice with steamed broccoli or your favorite vegetables.
