Cut the mini potatoes into two halves or for larger ones into thirds
In a large enough bowl to contain the potatoes and be able to move them around, put some olive oil and mix in the spices and salt
Add the mini potatoes and mix around until they are evenly coated with olive oil and spices
And more spices and salt and repeat mixing if needed
Place on foil lined large tray and spread out all the mini potatoes on it
Roast in oven on roast setting at 400 degrees for 15 minutes on the bottom rack
Check potatoes and then change the temp to 425 degrees and then roast for another 10 minutes on the top rack and they should come out perfect
