Preheat your sous vide precision cooker to the desired final temperature.
Season the steak generously with salt and pepper.
Add aromatics to the bag if using.
Seal the bag using a vacuum sealer or the displacement method.
Drop the bag into the water bath and cook according to the timing charts.
Remove the steak from the bag and pat it dry.
Preheat a skillet and add oil.
Sear the steak in the skillet until browned on both sides.
Serve immediately.
