Preheat the oven to 400 degrees F and spray a large sheet pan with cooking spray.
Wash the baby potatoes and quarter them. Slice an onion and chop your broccoli into slightly larger pieces.
Add all of the veggies to the sheet pan and drizzle with olive oil. Season the veggies with about half of the seasoning blend.
Add the chicken thighs to a bowl and season with the rest of the seasoning blend. Add enough Parmesan Garlic sauce to coat the chicken and stir until well coated.
Add the seasoned chicken to the sheet pan with the veggies.
Bake at 400 degrees F for 35-40 minutes, or until the chicken reaches an internal temperature of at least 185 degrees F.
Broil for a few minutes if desired. Top everything with shredded Parmesan cheese and serve.
