My Fave - Baked Chicken And Rice Casserole ( Quick - 1 Hour)
  1. Preheat oven to 375°F. Grease a 9x13-inch casserole with nonstick cooking spray. Set aside.

  2. Combine the paprika, garlic powder, onion powder, thyme, salt, and pepper in a small bowl.

  3. Pat the chicken dry with paper towels.

  4. Sprinkle the seasoning evenly over the thighs.

  5. In a mixing bowl, whisk the soup, broth, and rice together.

  6. Pour the soup mixture into the prepared baking dish.

  7. Then nestle the chicken into the rice.

  8. Cover the pan with foil and bake for 35 minutes.

  9. Then remove the foil and continue baking for 10-15 more minutes; or until the chicken is fully cooked to 165°F.

  10. Remove the baking dish from the oven and allow it to sit for 5-10 minutes before fluffing the rice and serving. Garnish with parsley, if desired.
